First Things First: What Is LEVO?
LEVO is a beautifully designed modern infusion device that automates the entire infusion process. Whether you are simply infusing basil for a pasta sauce or fat-washing gin with olive oil, the LEVO infuser makes it ridiculously easy to enjoy homemade culinary and wellness creations – without the messy cleanup.
LEVO uses controlled heat and a magnetic immersion mixer to transfer flavor, aroma, and nutrients from a variety of ingredients into the fat of your choice (oil, butter, ghee, etc.). Plus, the gentle infusion method doesn’t aerate ingredients, helping to increase their shelf life.
It’s become one of my favorite tech-gadgets / home appliances and has been giving my Anova sous vide a run for its money. Infusing with LEVO couldn’t be easier or more intuitive. So without further ado, let’s infuse some oil!
Cannabis-Infused Extra Virgin Olive Oil Recipe (LEVO Infuser):
- 16 ounces of extra virgin olive oil (I prefer single origin Greek olive oil)
- 2-4 grams of organic pesticide free cannabis (I prefer higher CBD strains)
Step 1 Clean Your Herb
As with any cannabis infusion, you may want to consider “cleaning” and blanching your herb prior to infusing to leach out some of the chlorophyll and impurities like pesticides and metals (especially if your flower is not organic).
Step 2 Decarb (optional)
Definition: Decarbing means removing the “A” molecule (Acid), from the THCA and CBDA. This happens when releasing the “A” carbon atom from “A” carbon chain, resulting in THC and CBD. The only way to achieve this is with heat and time.
Since we will be infusing with the LEVO, we do not necessarily need to decarb our cannabis prior to infusing. But if you are not using a LEVO to infuse and/or would like a higher potency final product, you can always decarb your flower beforehand. Here’s an easy step-by-step method for decarbing your weed.

Step 3: Program, Simmer & Steep
First, swipe down to power your LEVO on, press the child lock button to unlock, and push down on the lid to open.
Next, measure up to 16 oz (no less than 5oz) of olive oil, or any ingestible oil or butter, and pour into the metal reservoir (you can use solidified butter or oil but LEVO recommends cutting it up into cubes first).
Then place your herb of choice in the infusion pod and insert where its says “Insert Here”, making sure the coin-shaped yellow magnetic mixer is aligned in the center of the reservoir before closing and locking the lid.
The last thing you need to do is set the desired time and temperature and simply press start. For this cannabis-infused olive oil recipe we’ll be infusing at 162°F for 2.5 hours.
LEVO has a handy live “Time & Temperature Calculator” on their website that was developed by gathering professional duration and temperature best practices settings for various herb and oil pairings. It’s an excellent resource for planning future infusions.
Much like pre-heating an oven, the timer on LEVO will start counting down once the target temperature is reached. The digital display will read “INFUSING” once your infusion begins; when your infusion is complete, you will hear a “beep” and the display will read “LEVO”.
Now all that’s left to do is place a clean mason jar on the circle tray and press the droplet icon to dispense the infusion. Voila! You’re left with a gourmet cannabis-infused oil that actually tastes great, and can be used for all sorts of epicurean recipes. And best of all, when you’re finished infusing, you can throw the reservoir in the dishwasher for a no-mess cleanup.
On average, I find olive oil infusions typically keep for 10-30 days depending on the amount of moisture in your flower. You can prolong your shelf-life by using a sterilized container and keeping your finished infusions in a cool dark place.
Yea, But How Potent Is It?
I get a lot of questions about potency. And honestly, it’s a tricky question to answer with confidence. Determining the potency of your final product will ultimately depend on a few factors like the potency of your herb, duration, temperature, and the type of oil you are infusing with. For this specific infusion, I leveraged a high-CBD strain called Harlequin, which typically tests around the 5:2 CBD/THC ratio. I like this strain because it tends to relax without sedation, and to relieve without intoxication.
I always recommend high CBD strains and infusing at lower temperatures when starting out. This will ensure most of the wholesome goodness (terpenes, nutrition, and aroma) of your ingredients will remain intact and allow you to experiment with dosing levels you feel comfortable with.
